Garbanzo burgers, vegan

1-WP_20160426_001Passover is such a challenge. No wheat, oats, spelt, rye or barley.

As a vegan I eat beans, quinoa, rice and amaranth. so I thought I would try to make a burger. First I cooked short grain brown rice and a crockpot full of garbanzos. I only made 8 burgers , as I always go light on a new recipe but you can easily double or triple it. Just don’t over salt the mix. I served them on lettuce leaves but I am sure they would have been good on matzo, too.

Ingredients

  • 1 cup of cooked garbanzos
  • 1 cup of cooked brown rice
  • 1 grated carrot
  • 1/2 cup green cabbage chopped fine
  • 1/2 cup diced onion
  • scan 1/2 cup of garbanzo flour
  • 1/2 tsp. sea salt
  • 1/2 tsp. turmeric powder
  • 1 tsp. garam masala powder
  • 1/8 tsp. pepper
  • a dash of cayenne powder(more if you like
  • olive oil to fry in
  1. Put the beans and rice in a food processor and combine well.
  2. Add the rest of the ingredients and process until well mixed.
  3. Heat a cast iron pan on medium heat and add oil.
  4. Scoop mix with a spoon and flatten.
  5. Cook  5 minutes on side one and turn. Watch that they don’t burn. Adjust heat depending on your stove
  6. Cook 3 minutes on side two.
  7. Cover the pan, turn off heat and let sit for 5 minutes.
