Carrot cake, vegan

My son’s favorite cake is carrot so for his birthday I made him a carrot cake with a new recipe.

I am posting it because it was a success. Even my husband who swears he does not like cake, liked it.

Ingredients

  • 2 cups grated carrots
  • 1/2 cup brown sugar
  • 1/3 cup white sugar
  • 1 tsp vanilla extract
  • 3/4 cup almond milk
  • 2/3 cup canola oil
  • 2.25 cups of white unbleached organic flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice, freshly ground
  • 1/2 cups chopped walnuts

Directions

  1. Preheat oven to 350 degrees
  2. Grease 2 9″ round pans. Put in parchment paper for easier taking out.
  3. Combine the oil and both sugars.
  4. Add soy milk and stir.
  5. Add carrots and stir with a fork.
  6. Mix together in a separate bowl flur, baking powder and soda, and spices.
  7. Add dry ingrdients to carrot mixture and stir together with a fork
  8. Add walnuts and again stir with fork, not very much.
  9. Put the batter equally in the 2 pans
  10. bake for 20-25 minutes.
  11. Cool on a rack
  12. Take out cake and frost.

 

 

 



Gomasio

I finally figured out how to toast sesame seeds without burning them.

I heated a cast iron pan to medium on my electric stove.

Then I added 1/4 cup of sesame seeds. they pop so you need to hold a splatter screen over them.

When the popping slows down take them out of the pan and put them in a bowl.

Now to make gomasio.

Put the sesame seeds in a spice grinder and grind for 2 seconds. Yep 2 seconds is all .

Add 2 tsp of earth salt and grind for one second more, Just a pulse.

That is it. You can put it on cooked greens, beans or whatever you choose.

Here is the quilt I made for my granddaughter, back and front.
