Freezing Peaches

My friend Melanie and I both bought fresh peaches right off the trees in Stonewall, Texas and want to freeze them. There is nothing like the taste of a Texas peach that has ripened BEFORE it has gone in the refrigerator. Even when one freezes them, they are so much better if they have ripened first!
- Put a pot of water on to boil. Make sure the water is deep enough to cover the peaches.
- Put water in the sink. Add ice.
- Put about 5 peaches in the boiling water. Set your timer for one minute and cover.
- Take peaches out with slotted spoon and put directly into ice water.
- Take skins off peaches. They will slip off easily.
- Cut peaches into slices.
- Put 4 cups of sliced peaches in a quart freezer bag.
- Label bag with indelible marker. Date.
- Freeze. If possible put on an empty shelf where they will freeze quickly.
