Cucumber and red onion salad

My daughter  called me last night for this recipe. I make it often just by memory, but for her I looked up the original recipe. I think I put in about 1/4 tsp of salt( 4 pinches?)

  • 4 cucumbers- peeled if skin is bitter
  • 1 large red onion
  • 3 cloves of garlic
  • 8 Tbsp. of apple cider vinegar
  • 6 Tbsp. of canola oil
  • 1 cup water
  • 3 Tbsp of sugar
  • pinch each of salt, pepper and basil
  1. Slice cucumbers and put in a ceramic or glass bowl
  2. Slice onion thinly and add to cucumber.
  3. Combine the rest of the ingredients in a pint ball jar and shake vigorously.
  4. Pour over vegetables.
  5. Let  marinate covered in refrigerator overnight for best flavor.
