Pickle recipe

With my overabundance of cucumbers this year I decided to try canning some of them. I looked for the easiest recipe I could find with no sugar(per my hubbie’s request).

  1. Wash the cucumbers and put them in jars.
  2. Make a solution of 2 cups vinegar, 2 cups water and 2 Tablespoons salt and bring to a boil.
  3. Add garlic cloves and dill weed to each jar.
  4. Fill with boiling solution.
  5. Process in boiling water bath for 10 minutes for quarts.

It can’t get any easier than that. I will tell you how they taste when they are ready in 2 months. In the mean while we are eating much cucumber salad and much Israeli salad.

Cucumber ideas:
* there’s an interesting sweet and sour recipe tempeh recipe in Nancy McDermott’s thai vegetarian cookbook. The cucumbers are cooked! I was skeptical but it turned out well. Here’s a photo.
* I had a salad recently at Frontera Grill in Chicago that was julienned cucumber, jicama, and pineapple, with lime juice and ancho chili powder. So good!
* I also love to julienne cucumbers and mound them in a pile over cold sesame noodles, then drizzle on toasted sesame oil. There’s a good recipe in Madhur Jaffrey’s world of the east cookbook.
