I don't ever have potato peels to put in my vegetable broth because I never peel my potatoes, and I usually just use scraps to make vegetable broth. But it's easy enough to find out. Boil up a few peels and see what the water tastes like.

You really should add some acid because tomatoes are not always acidic enough to procces with the boiling water method. This is especially true since you are adding more low acid ingredients. You will say "this is how I always do it" but my recomendation is that it is better to err on the side of safety

I'd note that in my experience, it's worked better to get the okra ready to fry (with the cornmeal, salt and pepper), then put it on a cookie sheet and freeze it raw in a single layer. Once it's frozen, remove it to bags. I swear you can't tell it from fresh, when you fry it.

The only thing doing well in my garden is arugula, which is absolutely thriving. My okra is about dead, same for pumpkin, tomatoes are terribly unhappy.

When I was 5, mom planted a tomato plant I brought home from school behind a shrub, i.e. in total shade. The tomato gave big beautiful fruits all summer long. Maybe total shade is the secret for tomatoes here.
