Freezing zucchini

You can blanch the zucchini for 3 minutes and then freeze it in freezer bags, but then I ask myself , why?

I don’t particularly care for frozen zucchini. It is too watery.

When zucchini is fresh I love to roast it. I also like it sauteed with onions, yellow squash and garlic. I like it grilled on the outside grill. I like it in curries.

But frozen zucchini, yuk.

I have given away multitudes of yellow squash and zucchini to my daughter’s co-op, to the food bank , to friends.

Now I am going to make a vegan zucchini lasagna that uses zuchini strips instead of noodles. If it works I will post the recipe.

I shred up zucchini to freeze. Great in soups and spaghetti sauce. (can use the big guys for this too)
